This fresh and zesty salad makes a delicious side dish for any meal, and it also makes a wonderful accompaniment to charcuterie platters.

GOYA® Extra Virgin Olive Oil
3 tbsp.
GOYA® Red Wine Vinegar
2 tsp.
GOYA® Minced Garlic
1 tsp.
GOYA® Adobo All-Purpose Seasoning with Pepper
¼ tsp.
GOYA® Crushed Red Peppers
½ jar (6.75 oz.)
GOYA® Manzanilla Olives Stuffed with Minced Pimientos, drained
½ jar (4 oz.)
GOYA® Fancy Pimientos, diced
2 cups
diced cucumbers
2 cups
cherry tomatoes
4
green onions, thinly sliced
¼ cup
thinly sliced fresh basil
½ cup
crumbled GOYA® Queso Fresco, optional
Step 1
In large bowl, whisk together oil, vinegar, garlic, Adobo seasoning and crushed red peppers.
Step 2
Add olives, pimientos, cucumbers, tomatoes, green onions and basil; toss to combine. Let stand for 10 minutes before serving. If desired, finish with queso fresco.
