This quick one-skillet meal meets the MyPlate guidelines for lower sodium, sugar and fat, but with creamy delicious flavor. It starts with GOYA® Low Sodium Yellow Rice combined with garlic, a vibrant mix of veggies and hearty GOYA® Low Sodium Black Beans. GOYA® Low Sodium Yellow Rice
1 bag (1 lb.)
frozen mixed vegetables (broccoli, cauliflower and peppers), thawed
1 can (15.5 oz.)
GOYA® Low Sodium Black Beans, drained and rinsed
2 tsp.
GOYA® Minced Garlic, or 2 cloves garlic, finely chopped
½ cup
GOYA® Queso Blanco (white cheese)
Freshly chopped parsley or cilantro (for garnish)
Step 1
In 12” skillet, bring 2 cups water to boil. Add contents of yellow rice mix and olive oil; stir to combine. Boil 30 seconds. Reduce heat to medium low. Simmer, covered until rice is tender and water is absorbed, about 25 minutes.
Step 2
After 20 minutes, stir in mixed vegetables, black beans and garlic; cover and cook for remaining 5 minutes.
Step 3
Remove skillet from heat; stir in cheese. Let skillet sit, covered, until cheese is melted, about 5 minutes more. Serve warm and top with chopped parsley or cilantro.
