Caribbean Squash Soup

The heart of the Caribbean seems to be part of this magnificent soup; spices, exceptional ingredients and the sea breeze.

Ingredients

1 - 1 1/2 lbs. squash cut in small pieces

2 cloves garlic

1 medium onion

Tie up these spices: parsley, thyme, bay leaf, celery, leek, scallion, carrots, and marjoram

2 tomatoes - medium pealed, chopped, seeded

2 Goya Chicken Bouillons envelopes

5 cups water

3 oz. white wine

1 tbsp honey

1 tsp cinnamon powder

1 cup heavy cream

1 tsp salt and pepper

Directions

1. Simmer all the ingredients except salt, pepper and cream in a big pot.
2. Heat until the squash is tender and soft.
3. Take the spices out and blend. Pour back into the pot.
4. Add salt, pepper and cream. Simmer.
Serves 6
