Costa Rican Hearts of Palm Salad (Ensalada de Palmito)
Ingredients
Salad:
1 head iceberg lettuce in bite size pieces or equivalent amount of your favorite type of lettuce(s)
½ medium red onion, sliced thin
½ pint grape tomatoes
1 red bell pepper or equal amount of yellow of green bell peppers, diced a ½ inch
1 can (14.1 oz.) GOYA® Whole Hearts of Palm, cut into 1 inch pieces.
½ tsp GOYA® Adobo with Pepper or to taste
Pink Sauce:
1 cup GOYA® Mayonnaise
3 tbsp. ketchup
Directions
| 1. | Line a serving platter with lettuce leaves. Arrange onions, tomatoes, peppers and hearts of palm on top of lettuce. Season with Adobo. |
| 2. | In bowl, mix mayonnaise and ketchup. |
| 3. | Serve salad with pink sauce on side. |
