Island Style Fish

This dish is made with a mild fish so that the seasonings - from the tangy cider vinegar to the Goya Adobo - really shine through.

Ingredients

1-lb. red snapper fillets, or other firm white fish fillets

Goya Adobo All-Purpose Seasoning with Pepper (for Step 1)

2 tbsp. Goya Olive Oil

1 small red onion, thinly sliced

1 small green bell pepper, thinly sliced

1 tsp. Goya Minced Garlic or 2 cloves fresh garlic, minced

1/2 Goya Fancy Spanish Red Pimiento, sliced

1 tbsp. Goya Cider Vinegar

1/2 tsp. Goya Adobo All-Purpose Seasoning with Pepper

1 tsp. Goya Tomato Paste

1/2 cup water

Directions

1. Season fish with Adobo.
2. In large skillet, heat oil on medium high. Cook fillets 1 minute on each side. Remove to a warm platter.
3. Stir remaining ingredients into skillet. Bring to boil, lower heat, cover and simmer 5 minutes.
4. Return fish to skillet. Cover and simmer until fish is cooked, about 3-5 minutes.
Serves 4
