Mexican Seasoned Chicken

Dishes prepared in Yucatán have their own distinct personality. So it's no surprise to find an unusual way of preparing chicken or turkey from that region. Pollo en Escabeche is traditionally served on Christmas Eve. But after you try it you'll understand why it's also popular year round.


For Chicken:

3 lbs. chicken thighs or whole chicken cut into serving pieces

GOYA® Adobo with Pepper

4 fresh guereo (blond) chiles or other light yellow chiles

4 garlic cloves, peeled and lightly flattened with side of knife

1 tbsp. GOYA® Leaf Oregano

8 whole allspice berries or ½ tsp. ground allspice

8 pepper corns or ½ tsp. coarsely ground black pepper

2 inch piece GOYA® Cinnamon Stick or 1/8 tsp. GOYA® Ground Cinnamon

For Marinade:

3 tsp. GOYA® Minced Garlic or 6 cloves fresh garlic, minced

2 packets Sazón GOYA® with Coriander and Annatto

1 tbsp. GOYA® Bitter Orange Marinade

1 tsp. GOYA® Adobo with Pepper, to taste

For Broth:

¼ cup GOYA® White Vinegar

¾ cup GOYA® Bitter Orange Marinade

2 packets Sazón GOYA® with Coriander and Annatto

3 large white onions, cut into ¼ inch slices


1. Season chicken with Adobo. Put chicken, chiles and garlic in pot, cover with water and bring to boil. Skim foam, reduce heat and add oregano, allspice, black pepper and cinnamon. Simmer until chicken is tender, about 20 minutes. Remove chicken and chiles. Let cool. Cut each chile into 4 strips and set aside. Strain broth and return to pot and set aside.
2. For marinade, combine garlic, Sazón, Bitter Orange Marinade, and Adobo in bowl and make paste. Rub paste on chicken, and set aside to marinate at room temperature for at least 15 minutes.
3. Heat grill or broiler.
4. Skim fat from surface of reserved broth. Place on medium heat and stir in Vinegar, Bitter Orange Marinade, Sazón, onion and chiles strips. Bring to boil and simmer for 1 minute, turn off the heat, cover and keep warm.
5. Grill or broil chicken, turning frequently, until well-browned, about 5 minutes.
6. Serve chicken with small amount of broth, and accompany with onions and peppers as side dish.
* Note: This dish can be accompanied with warm corn tortillas and white rice.
