Rice and Beans from Trinidad

From Trinidad; a special rice and beans recipe with a coconut twist and a little spice. An exclusive recipe from Port of Spain.

Ingredients

2 cans Goya Pink Kidney Beans

4 cups coconut milk

2 envelopes Goya Beef Bouillon

2 chopped scallions

1 hot pepper

1 clove garlic minced

2 cups Goya Rice

1 envelope Sazón Goya

Directions

1. Heat coconut milk and bring to the boil.
2. Add bouillon, scallions, hot pepper and garlic.
3. Boil 5 minutes.
4. Add rice, stir and simmer - 10 minutes.
5. Add beans and sazon. Simmer 10 more minutes. Take out the hot pepper before in opens. Serve.
Serves 4-6
