Rice with Mixed Vegetables and Bacon

Ingredients
1/4 cup Goya Olive Oil
4 bacon strips chopped
1/2 cup Goya Sofrito
2 tbsp Goya Garlic chopped
1 envelop Goya Sazon with Culantro & Achiote
1 envelop Goya Chicken Bouillon
2 cups water
2 cups Canilla Long grain Rice
Salt and pepper to taste
1 can 15.5 oz. Goya Red Beans - no water
1 can 15.5 oz. Goya Chick Peas – no water
1 bag 8 oz. Goya Mixed Vegetables
Directions
| 1. | In a medium casserole, heat the olive oil. Sauté the bacon until brown. |
| 2. | Add the sofrito, garlic, sazon, bouillon, water and bring to a boil. |
| 3. | Add the rice and season to taste. Cover and simmer 20 minutes. |
| 4. | Add the vegetables, cover and simmer for 5 more minutes until vegetables are tender. Serve with grated cheese. |
| 5. | Additional: You can replace the bacon with chicken or turkey in cubes. |
