Shrimps with Coconut & Curry Sauce
Ingredients
2 lbs. medium or large fresh shrimps
¼ cup butter or margarine
1 cup chopped onions
¼ cup strained flour
2½ cups milk
1 tbsp. GOYA® Curry Powder
¾ cup GOYA® Cream of Coconut
1 tsp. salt
½ tsp. ginger powder
¼ cup GOYA® Lemon Juice
Directions
| 1. | In a skillet, sautée onions in butter and add flour. Add milk and stir until it softens. Add cream of coconut, curry, salt and ginger. Cook at moderate temperature so it thickens. |
| 2. | Add lemon juice and cook over low heat for 20 minutes. |
| 3. | Add the shrimp and cook over low heat for 10-15 minutes. |
Serves 6-8.
