Small White Beans & Chicken

A different chicken-in-the-pot.

Ingredients

2 cans Goya Small White Beans, not drained

2 lbs. chicken, cut in pieces

1/4 cup Goya Corn Oil or butter

1/4 cup onion, minced

1/2 lb. mushrooms, sliced

2 cloves garlic, minced

1/4 tsp. black pepper

1 tbsp. parsley, chopped

1/2 tsp. tarragon

1/2 cup Dry White Wine

1 large tomato, chopped

Directions

1. Brown chicken pieces in corn oil or butter and remove.
2. Sauté onion, mushrooms and garlic.
3. Add beans and remaining ingredients.
4. Set browned chicken pieces in bean mixture; bring to boil.
5. Cover, and simmer 20 to 30 minutes.
Serves 4
