Small White Beans & Chicken
A different chicken-in-the-pot.
Ingredients
2 cans Goya Small White Beans, not drained
2 lbs. chicken, cut in pieces
1/4 cup Goya Corn Oil or butter
1/4 cup onion, minced
1/2 lb. mushrooms, sliced
2 cloves garlic, minced
1/4 tsp. black pepper
1 tbsp. parsley, chopped
1/2 tsp. tarragon
1/2 cup Dry White Wine
1 large tomato, chopped
Directions
| 1. | Brown chicken pieces in corn oil or butter and remove. |
| 2. | Sauté onion, mushrooms and garlic. |
| 3. | Add beans and remaining ingredients. |
| 4. | Set browned chicken pieces in bean mixture; bring to boil. |
| 5. | Cover, and simmer 20 to 30 minutes. |
