Easy Rice Pudding With A Hint of Citrus

Arroz con Leche is one of the world’s favorite desserts.

Citrus essences of orange and lemon are the hallmarks of this Spanish version and add to the vibrancy of cinnamon, rum, and vanilla.

Serves 4-6

Ingredients

5 cups milk

1 tsp. ground cinnamon

1 cinnamon stick

1 orange peel

1 lemon peel

1/2 cup GOYA® Medium-Grain Rice

1 tsp. vanilla extract

1 oz. light rum

3/4 cup sugar

Directions

1. In a large saucepan, combine milk, cinnamon, cinnamon stick, orange peel and lemon peel. Bring to a boil.
2. Remove from heat for one minute, then add rice, vanilla extract and rum. Return to a boil, stir once, reduce heat, and boil gently for 20-25 minutes, or until rice is done.
3. Remove from heat. Discard peel and cinnamon stick and gently stir in sugar.
