Pasta Fagioli
A Garden Pasta Fagioli Delight
Buttery, GOYA® White Kidney Beans star in this classic vegetarian pasta fagioli soup. Pasta fagioli means “pasta and beans,” and ours is chock full of both. Fragrant with fresh basil, it’s a hearty, healthy, weeknight meal. It comes off the stove and into your family’s hearts in 20 minutes flat!Serves 4

Ingredients
2 cans GOYA® White Kidney Beans, drained
4 tbsp. GOYA® Extra Virgin Olive Oil
1 large onion, chopped
1 clove garlic, minced
2 cups canned plum tomatoes
1 cup macaroni, cooked
Fresh basil, to taste
1/4 tsp. dry basil
1/2 tsp. salt
Black pepper, few grains
Garnish:
Grated Parmesan Cheese
Directions
| 1. | Heat oil in a 2-quart saucepan; add onion and garlic and sauté until onion is tender. |
| 2. | Add tomatoes and simmer 10 minutes. |
| 3. | Combine beans, cooked macaroni, basil, salt and pepper. |
| 4. | Bring to a boil. |
| 5. | Serve hot. Garnish with Parmesan cheese. |
