Arroz con Leche - Rice Pudding
Rice pudding – next to flan – is one of Spain’s favorite desserts. Unlike bland rice pudding, this one is delicious.
Ingredients
5 cups milk
1 tsp. ground cinnamon
1 cinnamon stick
1 orange peel
1 lemon peel
1/2 cup Goya Medium-Grain Rice
1 tsp. vanilla extract
1 oz. light rum
3/4 cup sugar
Directions
| 1. | In a large saucepan, combine milk, cinnamon, cinnamon stick, orange peel and lemon peel. Bring to a boil. |
| 2. | Remove from heat for one minute, then add rice, vanilla extract and rum. Return to a boil, stir once, reduce heat, and boil gently for 20-25 minutes, or until rice is done. |
| 3. | Remove from heat. Discard peel and cinnamon stick and gently stir in sugar. |
Serves 4-6
