Thai Rice with Lime and Cilantro

Ingredients
3 tbsp. peanut oil
1 medium red bell pepper, finely chopped (about 1 cup)
2 scallions, thinly sliced (about ½ cup)
1 tsp. GOYA® Minced Garlic or 2 cloves minced garlic
2 cups GOYA® Jasmine Rice
2 cups water
1/2 cup GOYA® Coconut Milk
1 packet GOYA® Cubitos Chicken Bouillon
1 kaffir lime leaf* or 1 strip lime zest (3-inch by 1-inch)
1/2 cup coarsely chopped fresh cilantro

Directions
| 1. | Heat oil in medium saucepan over medium-high heat. Stir in pepper, scallion and garlic; cook for 1 minute. Add rice; cook, stirring occasionally, until rice is coated in oil and begins to become opaque, about 5 minutes. |
| 2. | Add water, coconut milk, bouillon and lime; stir. |
| 3. | Bring water to boil, cover and lower heat. Simmer for 20 minutes until the liquid is absorbed and rice is tender. |
| 4. | Remove lime. Stir in cilantro. Serve. |
