Yields:6 Servings
Ingredients
1
(3 lb.)
boneless pork loin
1 bottle
(24 oz.)
1 tsp.
GOYA® Adobo All-Purpose Seasoning with Pepper, plus more, to taste
1 tbsp.
1 lb.
fresh cranberries or frozen cranberries, thawed, plus more for garnish
1 packet
GOYA® Powdered Chicken Flavored Bouillon, mixed with 1 cup hot water
¼ cup
plus 1 tablespoon, GOYA® Pure Honey
¼ cup
spiced rum (optional)
3
chipotle peppers, from 1 can (7 oz.) GOYA® Chipotle Peppers in Adobo Sauce, finely chopped
2 tsp.
2 tbsp.
Dijon mustard
1
orange, sliced, for garnish
1
orange, zested, for garnish
1 tbsp.
chopped fresh parsley, for garnish
Directions
Step 1

Marinate the Pork: Place the pork loin in a large container with a lid or a large bowl. Add the mojo marinade and Adobo, then massage the mixture evenly over the pork to coat completely. Cover and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to penetrate. Discard the marinade before cooking.

Step 2

Preheat the oven to 375°F. Remove the pork from the marinade and pat dry with paper towels. Heat the oil in a large oven-safe skillet over medium heat. Sear the pork for about 5 minutes, turning occasionally, until browned on all sides. Transfer to a plate and set aside.

Step 3

Prepare the Cranberry-Chipotle Sauce: In the same skillet, combine the cranberries, bouillon mixture, honey, rum, chipotle peppers, and garlic. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens into a rich sauce, about 15 minutes. Stir in the mustard and remove from the heat. Carefully transfer the sauce to a blender and blend until smooth, about 30 seconds. Season with Adobo to taste.

Step 4

Return the pork loin to the skillet and pour the cranberry-chipotle sauce evenly over the top. Transfer to the oven and roast for 40 to 50 minutes, covering loosely with a lid or aluminum foil halfway through cooking, until an instant-read thermometer inserted into the thickest part of the pork registers 145°F.

Transfer the pork to a cutting board, tent loosely with foil, and allow it to rest for at least 10 minutes before slicing. Arrange on a serving platter and spoon the cranberry sauce over the pork. Garnish with orange slices, orange zest, and parsley before serving. Enjoy!
