<p>(1 pint) pistachio gelato</p>

1 cup

<p>dark rum</p>

1 tsp.

<p>vanilla extract</p>

½ tsp.

<p>ground cinnamon</p>

2 cups

<p>ice</p>

¼ cup

<p>crushed salted pistachios</p>

<p>In blender, mix coconut milk, cream of coconut, pistachio gelato, rum, vanilla, cinnamon and ice until frothy and creamy.</p>

Step 2

<p>Divide among 6 glasses. Garnish with crushed pistachios.</p>
