Ingredients

1 cup

<p>all-purpose flour</p>

1 tsp.

<p>baking powder</p>

½ tsp.

<p>baking soda</p>

¼ tsp.

<p>salt</p>

1 cup

<p>granulated sugar</p>

3

<p>eggs</p>

1 cup

<p>plain 2% yogurt</p>

2 tsp.

<p>lemon zest</p>

2 tsp.

<p>orange zest</p>

1 tsp.

<p>vanilla extract</p>

2 tbsp.

<p>icing sugar</p>

<p>Berries and whipped cream, optional</p>

Step 1

<p>Preheat oven to 350°F. Grease and flour 9-inch cake pan; set aside. Whisk together flour, corn meal, baking powder, baking soda and salt.</p>

Step 2

<p>In separate large bowl, beat together sugar, eggs and honey until light and fluffy; beat in olive oil until incorporated. Beat in yogurt, lemon zest, orange zest and vanilla until combined; stir in flour mixture just until combined. Scrape into prepared pan; smooth top.</p>

Step 3

<p>Bake for 35 to 40 minutes or until tester inserted into center of cake comes out clean. Let cool in pan for 15 minutes; invert directly onto rack and let cool completely. Dust with icing sugar. Serve with berries and whipped cream if desired.</p>

I've been making this recipe for years I use very fine white corn meal and add fresh blueberries absolutely delicious!! Big hit on the holidays 😋👏
