<p>Fall head-over heels for these creamy <em>“Marry Me”</em> chipotle beans! ½ cup

roughly chopped sun-dried tomatoes

3 cups

packed baby spinach

2 tbsp.

chopped fresh basil, plus more for garnish

½ cup

grated Parmesan cheese, plus more for serving

Step 1

<p>Heat oil in large skillet over medium heat. Add garlic and chipotle peppers and cook until fragrant, about 30 seconds. Add beans, coconut milk, tomato sauce, sun-dried tomatoes, Adobo and oregano. Simmer, stirring occasionally, until sauce reduces, about 5-8 minutes.</p>

Step 2

<p>Stir in spinach and basil, and cook until wilted, about 1 minute. Stir in Parmesan until smooth, about 1 minute. Garnish with additional basil and Parmesan and serve.</p>
