baby yellow potatoes, cut into ¼-inch slices

1 cup

thinly sliced yellow medium onions

½ tsp.

paprika

½ cup

water

¼ cup

white wine

2 tbsp.

finely chopped fresh parsley, for garnish

Step 1

<p>Soak salted cod in 2 quarts of cold water, changing water three to four times, for about 6 hours; drain. Cut cod into 1-inch, bite-sized pieces.</p>

Step 2

<p>Coat bottom of large, straight-sided skillet with 1 tbsp. oil. Layer half of the potatoes, drained cod, onion, pimentos, olives, capers, tomato sauce, garlic, paprika, cumin and 1/4 cup of olive oil. Repeat layering with remaining ingredients. Add remaining oil, water, wine and bay leaf.</p>

Step 3

<p>Bring to boil over high heat. Cover and reduce heat to medium-low. Simmer until potatoes are tender, about 30 to 35 minutes. Discard bay leaves. Garnish with parsley and serve.</p>
