Step 1

Prepare the beans: Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper. In a large bowl, toss the beans with the flour, cornstarch, oil, paprika, salt, and cumin until evenly coated.

Step 2

Spread the coated beans in an even layer on the prepared baking sheet.

Step 3

Bake, tossing halfway through, until the beans are golden brown and crisp, about 25–30 minutes.

Step 4

Prepare the picada: Meanwhile, combine the parsley, almonds, breadcrumbs, and garlic in a food processor. Pulse until finely ground. Add the oil and lemon juice and process until well combined. Season with salt to taste.

Step 5

Serve the crispy beans with hummus or picada and enjoy!

Plant-Based Breadcrumbs:

Looking for a plant-based breadcrumb option? Some brands of breadcrumbs are naturally plant-based, even if not labeled that way. Always check the ingredient list to be sure.

Cook in the Air Fryer:

Cook crispy breaded beans in the air fryer. Preheat the air fryer to 400°F and prepare the beans as directed in Step 1. Working in batches, arrange the beans in an even layer in the basket and cook, shaking halfway through, until golden-brown and crisp, about 15–20 minutes.

Storage & Reheating:

Crispy breaded beans are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. To restore their crunch, reheat in an air fryer at 400°F for 3–5 minutes, or on a rimmed baking sheet in a 425°F oven for 4–6 minutes.
