2 ½ cups

shredded yellow cheddar cheese

1 cup

chopped yellow or orange bell pepper

Serving suggestions:

Mexican crema, or sour cream

½ cup

seeded and chopped plum tomato

avocado, halved, pitted, peeled and cut into 1-inch pieces (optional)

Step 1

<p>Preheat oven to 425°F and line 2 rimmed baking sheets with parchment paper. Brush both sides of tortillas lightly with oil. Stack tortillas and slice into 6 wedges. Scatter tortillas over prepared baking sheets; sprinkle with salt. Bake, flipping chips halfway through, until light golden-brown and crisp, about 8 to 10 minutes. Set aside to cool slightly.</p>

Step 2

<p>Reduce oven temperature to 375°F. Spoon half of the ground beef and black beans over the top half of the chips. Sprinkle half of the cheese, bell pepper, and jalapeños over the top; then repeat the layers.</p>

Step 3

<p>Bake for 10 to 15 minutes, or until the cheese is melted. Drizzle with Mexican crema, or dollop with sour cream. Garnish with tomatoes, radishes, avocado (if using), and cilantro. Serve with <em>salsa taquera</em> or <em>salsa verde</em> for dipping.</p> <p><strong>Save Time:</strong><br /> Use your favorite ready-made tortilla chips and skip making them from scratch.</p> <p><strong>Vegan-Friendly Twist on a Classic:</strong><br /> Make this recipe vegan by replacing the ground beef with a plant-based alternative and using vegan shredded cheese instead of cheddar.
