GOYA® Red Enchilada Sauce

cooked shredded chicken

scallions, sliced and divided
1 can (4 oz.)

Step 1
Pre-heat oven to 400 °F. Spread ½ cup of enchiladas sauce on the bottom of a 9x13 baking dish. Set aside.
Step 2
In a bowl mix together chicken, ½ of the scallions, green chiles and corn.
Step 3
Heat tortillas in the microwave on a microwave safe plate for 20-30 seconds so they are easy to roll. Spoon ¼ cup of filling onto tortilla and roll setting seam side down into the baking dish. Continue with the remaining tortillas.
Step 4
Once enchiladas are placed into the baking dish pour the remain enchilada sauce onto even coating the enchiladas.
Step 5
Transfer to the preheat oven and bake for 15 min. Top with cheese and continue to bake until cheese is melted, and enchiladas are heated through about 10 min. Let cool for 5 min before serving and top with remain scallions, avocados, sour cream and lime wedges if desired.
