Ingredients

2 lbs.

boneless, skinless chicken thighs, cut into 1-inch cubes

2

green bell peppers, cut into 1-inch pieces

2

red bell peppers, cut into 1-inch pieces

1

large red onion, cut into 1-inch pieces

2

limes, halved

2 tbsp.

chopped fresh cilantro, for garnish

Step 1

<p>In a large container with a lid, combine chicken, Mojo marinade, Sazón, and 1 tsp. Adobo. Massage the marinade into the chicken to coat completely. Cover and marinate for at least 4 hours, or overnight.</p>

Step 2

<p>Remove chicken from marinade, discarding any excess. Evenly thread chicken, bell peppers, and onion onto 6 to 8 metal skewers or pre-soaked wooden skewers. Using a pastry brush, brush skewers lightly with oil; sprinkle with remaining Adobo.</p>

Step 3

<p>Heat grill to medium-high heat. Add skewers to hot, greased grill grates. Cook, turning occasionally, until chicken is cooked through and vegetables are tender, about 12 to 14 minutes. While skewers are cooking, grill limes, cut side down, until charred, about 1 to 2 minutes.</p>

Step 4

<p>Garnish skewers with cilantro. Serve with grilled limes and rice.</p>
