Stir-Fried Mojo Chicken, Peppers and Broccoli

Looking for an easy yet memorable dish? This delicious stir-fried chicken with vegetables will do. The secret to its flavor is found in seasoning the chicken with GOYA® Adobo All-Purpose Seasoning with Pepper and stir-fried in GOYA® Extra Virgin Olive Oil along with onion, broccoli, green and red bell peppers. Finish by adding a GOYA® Mojo Criollo mixture to heighten the flavor even more. Serve with a side of fluffy white rice for a superb meal.

Ingredients

2

<p>chicken breasts, cut into ¼” slices</p>

1 tsp.

ginger, minced

1 tsp.

GOYA® Minced Garlic, or 2 cloves garlic, peeled and minced

1

<p>red bell pepper, large dice</p>

1

<p>green bell pepper, large dice  </p>

1 cup

<p>broccoli florets</p>

1 cup

<p>white onion, large dice</p>

2 tsp.

<p>cornstarch</p>

Directions

Step 1

<p>Season chicken with Adobo.</p>

Step 2

<p>Heat one tablespoon olive oil in skillet.</p>

Step 3

<p>Add chicken, and cook through.  Remove from skillet and set aside.</p>

Step 4

<p>Add remaining olive oil, ginger and garlic to skillet. Cook 30 seconds.  Add peppers, broccoli and onion, and cook, stirring constantly, until cooked through.</p>

Step 5

<p>Stir cornstarch into Mojo until well combined.  Add Mojo mixture and chicken to skillet.  Cook, stirring to coat, until heated through, and sauce is thickened, about 1-2 minutes.</p>

Step 6

<p>Serve over rice.</p>
