GOYA® Chipotle Peppers in Adobo Sauce, minced, plus 2 tbsp adobo sauce

2 tbsp.

<p>Dijon mustard</p>

1

<p>fully cooked half bone-in ham (6 to 8 lbs.)</p>

1 lb.

<p>French green beans, steamed, for serving, optional</p>

<p>peaches, thinly sliced, for garnish, optional</p>

1

<p>small bunch thyme, for garnish, optional</p>

Step 1

<p>Preheat oven to 375ºF.</p>

Step 2

<p>In small saucepan set over medium heat, stir together peach nectar, honey, brown sugar, chipotles, adobo sauce, vinegar and mustard; bring to a boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 20 to 25 minutes or until sugar has dissolved and glaze has thickened to a syrupy consistency.</p>

Step 3

<p>Remove skin from ham and trim any excess fat if needed (discard). Using sharp knife, diagonally score ham in a diamond pattern. Transfer ham to rack fitted into roasting pan. Loosely tent with foil.</p>

Step 4

<p>Bake for 70 to 90 minutes or until instant-read thermometer inserted into thickest part of ham registers 110°F. Remove foil. Bake (uncovered), basting with half the reserved glaze every 15 to 20 minutes, for 45 to 60 minutes or until glaze has caramelized and instant-read thermometer registers 160°F when inserted into thickest part of ham.</p>

Step 5

<p>Tent with foil and let rest for 15 to 20 minutes.</p>

Step 6

<p>Arrange ham on serving platter or board. Arrange green beans on platter (if using). Garnish with peach slices, and thyme (if using).
