Ingredients

medium yellow onion, kept whole

¼

small red bell pepper, kept wholes

¼

small green bell pepper, kept whole

culantro leaves (optional)

water, plus more, as needed

¼ cup

fresh cilantro sprigs, plus chopped fresh cilantro, for garnish

½ lb.

kombucha squash or butternut squash, cut into 1/2-inch pieces

2-3 tsp.

Step 1

<p>Heat the oil in a medium pot over medium heat. Add the onion, bell peppers, tomato paste, garlic, culantro (if using), bouillon, and oregano. Cook until fragrant and the vegetables are crisp‑tender, 3 to 4 minutes. Stir in the beans with their liquid, the water, and the cilantro sprigs. Simmer over medium‑low heat for 10 minutes.</p>

Step 2

<p>Bring the mixture to a gentle boil and stir in the squash. Reduce the heat to medium‑low and simmer, covered, until the squash is tender and the sauce has slightly thickened and coats the back of a spoon, about 15 to 20 minutes. Discard the onion, bell peppers, cilantro leaves, and cilantro sprigs. Add the lime juice and season with Adobo to taste.</p>

Step 3

<p>Garnish the beans with cilantro. Serve with rice, <em>tostones</em>, and avocado.</p>

Allow the beans to cool to room temperature before storing. Transfer them to an airtight container and refrigerate for 4 to 5 days. When you’re ready to enjoy them again, reheat gently in a pot over medium‑low heat, adding a splash of water if needed to loosen the sauce and warm the beans through evenly.
