<p>If you are looking for a different salad, you must prepare this delicious <em>Cowboy Caviar</em>; a fresh and colorful salad with a base of beans and vegetables. Its secret is to let it marinate to intensify its rich flavor. Prepare it in advance and reserve until serving time. To make it, start by mixing GOYA® <a href="https://www.goya.com/en/products/blackeye-peas-can/">Blackeye Peas</a> and GOYA® <a href="https://www.goya.com/en/products/black-beans-can/">Black Beans</a>, along with corn, tomatoes, peppers, red onion, cilantro, jalapeño, and a citrusy dressing made with GOYA® <a href="https://www.goya.com/en/products/extra-virgin-olive-oil/">Extra Virgin Olive Oil</a>, vinegar, and lime juice. Once perfectly marinated, add some avocado and cilantro. Serve with tortilla chips for a crunchy delight. GOYA® Black Beans, drained and rinsed

GOYA® Blackeye Peas, drained and rinsed

(15.5 oz.)

2 cups

chopped plum tomatoes

½ cup

chopped green bell peppers

½ cup

chopped red bell pepper

⅓ cup

chopped small red onion

¼ cup

finely chopped fresh cilantro, plus more for garnish

Jalapeño pepper, seeded and minced

2 large

avocados, halved, pitted, peeled and diced

Corn tortilla chips, for serving, optional

Step 1

<p>In a small canning jar, add olive oil, lime juice, vinegar and garlic. Cover tightly with lid and shake to combine. Season with Adobo, to taste.</p>

Step 2

<p>Add black beans, blackeye peas, corn, tomatoes, bell peppers, red onion, cilantro, jalapeño, and olive oil mixture in a large bowl and toss to coat. Chill or let sit at room temperature for at least 30 minutes before serving to allow flavors to develop. Add avocados and toss to coat. Garnish with additional cilantro. Serve with tortilla chips.</p>
